The Benefits of Milk: The Whole Truth Revealed
The benefits of milk are a very controversial subject. Do you consider it a health food? The following information will challenge your thinking.
In the 1920's you could buy fresh raw milk, natural raw butter, real buttermilk and clabber. Clabber is unpasteurized milk that is allowed to sour. It is much like yogurt. The French call it creme fraiche.
The incidence of food borne illness was very rare.
Why mess with a good thing? But then it happened, the advent of large commercial farms. And yes, the incidence of food borne illness in milk became a problem.
Pasteurization became the solution to the problem. But, the long term effects were not studied.
Pasteurization has been accused of being the culprit in destroying the benefits of milk. Some health professionals blame cooked milk for food sensitivities, heart problems and immune system disorders. Here's how:
Pasteurization is the process whereby raw milk is cooked to kill harmful bacteria and prevent souring. In this process both harmful and useful bacteria are killed.
Vitamin C which is very unstable in high temperatures, is destroyed. Calcium is insoluble in pasteurized milk and poorly absorbed. This is because the enzyme that makes calcium soluble in milk is destroyed when heated!

The dead bacteria are not removed from pasteurized milk. YUMMY! This may be part of what causes sensitivities to milk.
Homogenization is another problem with milk. This is where large fat molecules are broken down into smaller particles which makes the fat evenly dispersed through the milk. No more fat floating to the top.
This has led to the theory that this can lead to these smaller fat particles more easily clogging your arteries.
As I've told you before, food in its most natural, unprocessed form is what is best for you. And of course, attention to clean conditions is a MUST!

When buying milk use these tips:
- Buy only raw Certified Grade A milk from a reliable source. This is a great resource on how to find
real milk
Once you try it you won't go back to cooked milk.
- If you live in a state where raw milk is legal, you can find it in some high end natural food stores such as Whole Foods. Expect that it will be more expensive then what you are used to paying. But once again you get what you pay for.
- If raw milk is not available to you, buy unhomogenized organic milk.
- You can add
keifer grains
to pasteurized milk. The resulting keifer will have good beneficial bacteria that was killed off in pasteurization.
